It’s crispy, it’s crunchy, and it’s HOT, but, guess what it’s not? Chicken! That’s right, I decided to put a vegan spin on a Nashville staple: hot chicken. Instead of chicken, I used cauliflower florets, and, instead of eggs, I used coconut milk. Hopefully the locals don’t yell, “blasphemy!” at me.

INGREDIENTS
- 1 lb cauliflower, florets
- Scallions for garnish
For the dredge:
- 1 cup all purpose flour
- 1 tbsp rice flour
- 1 tbsp cornstarch
- ½ teaspoon salt
- ½ tsp ground peppercorn
- ½ tsp cayenne pepper
- ½ tsp onion powder
- ½ tsp garlic powder
- ½ tsp paprika
- ½ tsp ground cumin
For the dip:
- ½ cup hot sauce
- ¾ cup unsweetened coconut milk
For the spicy drizzle:
- 1/4 cup (1/2 stick) butter (or butter substitute to keep it vegan)
- 3 tbsp cayenne pepper
- 1 tbsp brown sugar
- ½ tsp salt
- ½ tsp ground peppercorn
- ½ tsp paprika
- ½ tsp garlic powder
For frying:
- Peanut oil, enough to submerge cauliflower for frying
HOT TO MAKE IT
- In a medium-sized mixing bowl combine all the ingredients for the dredge. In a separate medium-sized mixing bowl, combine all the ingredients for the dip. Mix well and set aside.
- Now, in a small sauce pan on medium high heat, add the butter. Once melted, whisk in the remaining ingredients under the spicy drizzle. Keep sauce warm.
- In a dutch oven or frying pan on high heat, add enough peanut oil for frying.
- While the oil is heating, use one hand to dip a cauliflower floret into the wet mixture, then, with drop it into the flour mixture. Use your “dry” hand to coat it in the flour completely. Drop it back into the wet mixture,and then one more time into the dry mixture.
- Carefully place the coated cauliflower into the hot oil and cook for about 4-5 minutes or until the pieces are golden.
- Transfer fried cauliflower to large bowl and, while the cauliflower is hot, drizzle a little of the spicy sauce and toss it so the cauliflower is coated evenly. (Or,you can brush the poppers with the spicy sauce).
- Serve hot and enjoy! (Add a side of white bread and pickles to keep it true to Nashville!)
