By tradition, vindaloos are very spicy so my recipe title is redundant but figured I should include the disclaimer if you’ve never experienced a vindaloo dish. Yes, there are quite a few ingredients in this dish, but don’t let that stop you from making this highly flavorful curry.
The way the spicy coconut milk soaks in to the eggs in this curry dish is so, SO good. I usually eat this with appam, but it’s good with rice. Or, spoon this over a bowl of quinoa for a salad with a kick.
