You can do more than make banana bread when you’ve got a bunch of overripe bananas (or plantains). Try making these simple, but flavor-packed brownies instead! The bananas make the brownies super moist and fudge-like and, with a little bourbon flavor, chocolate, coconut, and peanut butter, you really can’t go wrong.

INGREDIENTS
- 3 overripe bananas
 - 1 cup sugar
 - 1/2 cup (1 stick) butter, melted
 - 1 teaspoon vanilla bourbon extract
 - 1 cup flour
 - ¼ cup cocoa powder
 - 1/2 cup shredded coconut
 - ⅛ teaspoon salt
 - ½ cup smooth peanut butter, lightly melted
 
HOT TO MAKE IT
- Preheat oven to 350°F. Use about a tbsp of the melted butter to grease your baking tray. (I used a 9×9 inch tray). Now take about a tbsp of cocoa powder and put it into the baking tray, shaking it in the tray until it evenly dusts the entire bottom of the tray.
 - In a mixing bowl, mash the bananas until they are smooth.
 - Once the bananas are smooth, whisk in the sugar, melted butter, and vanilla bourbon. (Save about a tbsp of butter to grease your baking tray).
 - Now, mix in the flour, salt, shredded coconut, and cocoa powder. Make sure everything is evenly mixed.
 - Pour the batter into your baking dish and make sure it’s leveled evenly. Now, with the baking tray facing horizontally, making 4-5 vertical lines of peanut butter in the batter. You don’t need to pour a ton of peanut butter, just enough to make a solid, vertical line down the batter. I poured my lines 1 inch from the sides and then 2 inches in between.
 - Once your peanut butter lines are done, use a butter knife (or I used a metal chopstick) to swirl the peanut butter. I like to run my knife through the batter/peanut butter from left to right, then up to down. Swirl until you’re happy with the look J
 - Bake for 25-30 minutes or until the edges crispy and the center becomes firm. Cut into squares and enjoy!
